Today I am making a Chipotle copycat dinner. One of the main parts of my Chipotle dinners is always guacamole. I love the stuff, especially Chipotle's! I just can't get enough of it and now I know how to make a similar recipe. Waistline, beware! The recipe is very easy, as long as your avocados are ripe enough to mash up.
Here's a Tip: The avocado is ripe if, when you slightly squeeze it, the fruit (yes, it is a fruit...) should be soft but shouldn't stay indented. Also, another way you can check the avocado's ripeness is by flicking off the stem of the avocado. If what you see underneath is green, you'll have a perfect avocado, as long as it is not firm when you squeeze. If the flesh underneath is brown, you'll have an over-ripened avocado that will be a mushy brown mess inside.
Onto the recipe now!
What You Need:
- 2 avocados
- 1/2 of a jalapeño pepper, seeded, sliced, and minced
- 1/4 of a red onion, finely chopped
- 2 Tbsp. cilantro, finely chopped
- 1/4 of a lime, juiced
- 1/4 tsp. salt
How To Do It:
First, mash the avocado into a bowl. When it is mashed well, add in the onion and jalapeño, stir. Next, add in cilantro, lime juice, and salt. Stir all together well and enjoy!
Here's a Tip: A way to keep your guacamole from browning is to keep the pit of the avocados and adding them to the covered bowl you store the guacamole in.
