Stir Fry

This is the best stir fry recipe I've tried! I have done stir fry before but this is completely my own and is totally delicious! Good luck and have fun with it!

What You Need:
  • 1 small red onion, diced finely
  • 2 cloves garlic, minced
  • 1 green pepper, chopped roughly
  • 1 red pepper, chopped roughly
  • shredded carrots
  • 1 cup jasmine rice
  • 1 1/4 cup water
  • soy sauce
  • oil
Disclaimer: You will see baby corn in my pictures but we didn't really care for them so I am omitting them from this post.

How To Do It:

First, dice up the onion finely and mince garlic if not purchased minced. Add oil to a medium sauce pan and heat on medium-high heat until fragrant.

Chop the peppers roughly (large chunks are okay) and add them to the onion and garlic when your kitchen begins smelling delicious.

Next, add the shredded carrots and stir all together.

Add soy sauce to suit your taste to the vegetables. When The veggies are cooking, make the jasmine rice. Add 1 cup of rice and 1 1/4 cup water to a large sauce pan and allow to simmer for 15 minutes or until tender. I found that on medium heat, my rice cooked much more quickly, closer to 8 minutes than 15. When the rice is cooked, add a small amount of oil to the rice along with a small amount of soy sauce.

Brown up the rice a little bit and by this time the veggies should be good and tender. Add the vegetables to the rice and stir everything together. After adding everything together, scramble two eggs and add them to the stir fry as well.

Enjoy!
